Rinse, pat dry and cut Tofu into 1″ pieces. Marinate (preferably overnight) with 2 tablespoons tandoori masala and a teaspoon of oil.
Heat a little oil in a wok, lightly fry marinated tofu, remove and set on kitchen paper to drain excess oil. To the heated wok, add 1 large ground onion, saute till cooked. Add freshly grated ginger and garlic add paprika, hot chilli powder, garam masala, salt and about 3 tablespoons of ground almonds. Mix well, add tofu, and a little vegetable stock if desired. Simmer for a few minutes or until cooked through. Garnish with fresh chopped coriander.
