Under-cook noodles (I use Lo Mein noodles) and set aside.
In a large wok, heat oil, and add a large onion sliced, 1 package mushrooms – quartered, 1 drained can baby corn, 1 tbsp freshly grated ginger and garlic. Then add 2 tbspns soy sauce, 1 tsp Mirin. Add lots of freshly ground pepper, mix well, then add the half-cooked noodles. Add some vegetable broth (enough to cook the noodles), and when done, add a tbsp of rice wine if the noodles stick too much to the wok. Top with 1/2 cup chopped green onions.
